Watermelon Cake for Birthday Fun from Nutmeg Notebook // Since we were transporting this cake to the park we secured the layers together with tooth picks. Then the fun began as I started to decorate it with berries – one of Alma’s favorites foods. I thought it would be fun to personalize it with her name. Hubby Tom used the watermelon rind and carved out the letters. He did the “A” first and he made it thick so that he could just slice it in half and then he only had to make one “A” and they were perfectly the same. Yep – he’s clever like that. We secured them to the watermelon layer with toothpicks. The berries on the top of the layers are also secured with tooth picks. The kiwi slices stayed in place without any additional help.

It’s the perfect St. Patrick’s Day dessert and an embarrassingly easy cake recipe to bake, made all in one bowl with box yellow cake mix and a package of instant pistachio pudding.

But that’s completely the norm for recipe testing. I had to make sure I was delivering my promise of a delicious, moist cake. I am now very confident in telling you…this is it. The cake itself and the frosting are just… SO. DANG. GOOD.

Vegan Gluten-Free German Chocolate Cake [Fruit-Sweetened + Oil-Free] from Healthy Helper // The ultimate healthy chocolate cake that tastes like a traditional German Chocolate Cake. Vegan, gluten-free, and full of sweetness from medjool dates, this dessert will be a hit with the whole family whether they’re vegan or not. It’s also oil-free and filled with nutty goodness! 

Red Wine Chocolate Cake with Cabernet Frosting from Champagne Nutrition // Made in a spring-form pan, it’s easy to cool and remove without sticking at all. While many recipes for red wine chocolate cake call for ganache, made from baking chocolate, I really didn’t want to boil out the alcohol so I opted for a simple powdered sugar, a bit of butter and again: red wine. Without cocoa in the frosting, it would be a purple color so I wanted to do a chocolate on chocolate but just with the hint of red wine flavor. Adding in chopped nuts offers not only a beautiful garnish but also some additional nutrition and texture. People proclaimed “you can taste the wine” when enjoying this cake – it certainly has an interesting flavor combination.

Fresh Strawberries and Cream Cake from Healthy Delicious // The first week that strawberries are really good might be the happiest that I am all year. Just follow your nose – if they’re ready, you’ll be able to smell them even before you see where they are in the store or at the market. Their scent is so intoxicating that it makes me giddy, and I buy them by the basket full. I just can’t help myself!
