Welcome back to Recipe Wednesday; another avenue to promote your very best content, this time in the form of your most favorite recipes on your blog. Each Wednesday when you visit HLB you’ll find the theme for the newest recipe round up.
Some weeks our themes read like cookbook chapters, spotlight ingredients or flavors, or simply request the best recipe for a certain situation. Find an appropriate recipe from your blog archives to fit the theme and add to the collection. Or be inspired to create a new theme-friendly dish worth posting about before next Wednesday.

Today we are celebrating February’s title of National Snack Food Month! Here are some of our favorite recipes from around the HLB community to make during your next #SnackAttack:
Pimiento Cheese Pepper Poppers from Holley Grainger // I’m so excited to finally share this recipe with you! I have been making these little poppers for parties for years! The key to making these pepper poppers shine is to start with my Lightened Classic Pimiento Cheese recipe. It is seriously the best ever! And, well, if you absolutely must take a shortcut, you can start with pre-made pimiento cheese.
Artichoke Crostini with Hummus and Cashews from Cadry’s Kitchen // With layers of hummus, marinated cashews, and grilled artichoke hearts, this artichoke crostini is a delightfully light & flavorful starter for summer get-togethers. Or if you’re anything like me, make a meal out of them along with a simple side salad.
Beet Hummus Toast with Figs and Goat Cheese from Chelsea’s Healthy Kitchen // This recipe was inspired by an appetizer I had at a restaurant in Windsor for my good friend’s birthday. I was a little nervous to eat beets in hummus form since they can be so overpowering. But I ended up loving the earthy sweetness of the spread, especially paired with the fresh figs and tangy goat cheese. So I knew I had to recreate it to share.
Crunchy Oven Baked Sweet Potato Chips from Clean Eats, Fast Feets // Since these chips were cut by my nimble fingers with a very sharp knife, they are not paper-thin; they are more like wedding invitation thin, which means they are not light and crispy. Rather, they are bold and crunchy, more akin to kettle cooked chips than a bag of Lays. Either way, they are incredibly easy to consume and just a teeny tiny bit addicting
Paleo Fruit Pizza Bars from Clean Eating Veggie Girl // I definitely believe that one of the best Summertime desserts (other than ice cream) is fruit pizza. It’s fresh. It’s colorful. And it’s even a little bit healthy when topped with organic fruit. At least that is what we are telling ourselves, right? Obviously your traditional fruit pizza isn’t exactly gluten-free, dairy-free, or refined-sugar-free. Luckily, this one is, so you can indulge your little heart out.
Stuffed Coriander Mushrooms from Elegantly Vegan // It’s a perfect Easter brunch recipe and a must for any mushroom lovers. The cashew filling becomes crunchy while baked in the oven which is a perfect addition to the soft mushroom. It’s a simple and very fitting recipe for Easter.
Easy Deviled Eggs from Heddleston Homestead // This recipe is super easy to make and an appetizer that I always gravitate towards at parties. While traditionally made with mayonnaise or Miracle Whip, I think using yogurt in them instead makes them a bit healthier and adds a bit of natural sweetness! As health experts recommend people with lactose intolerance (LI) try to keep dairy in the diet, this recipe is LI-friendly too!
Mango Avocado Dip for Two from Hello to Fit // Mango Avocado Dip for Two might be your new default for an afternoon snack, evening appetizer, or pre-bedtime treat! With just five ingredients and a handful of tortilla chips, you can dip your way into a sweet, salty, summery treat.
Portuguese Roll Ups from The Wife of a Dairy Man // This appetizer was SO good, it was all gobbled up before we left the house! What an easy appetizer this turned out to be. And as I’ve said before, everything’s great wrapped up in bacon.

Chipotle Baked Sweet Potato Fries from The Wheatless Kitchen // These baked sweet potato fries have an extra little kick from the chipotle powder. They are not too spicy, but have a nice smoky heat to them. This recipe could not be any easier, all you need are sweet potatoes, olive oil, S&P, and chipotle powder. Throw them in the oven and BOOM. Baked fries. And then the angels start singing.
Slow Cooker Meatballs with Orange Marmalade from The Chic Life // I also decided, since I had the time, to make the meatballs from scratch, but you can use frozen ones if you’re short on time. Opt for from-scratch to keep this recipe clean eating. But you can find a pretty cleanish version at your local health food store. And you can even make this recipe vegan by using vegan meatballs!
Goat Cheese Stuffed Peppers with Balsamic Glaze from Bean a Foodie // These little mini peppers were the perfect vehicle for the goat cheese and chive filling. Just as Melissa’s mentions on their site, these peppers are sweet but very mild in flavor. So they don’t over power the creamy, slightly oniony flavor of the cheese filling.
Banana Chips from Bloom and Spark // This is quite possibly one of the most simple and basic recipes I could post, other than how to boil water. These banana chips are a great snack to add to granola, trail mix or just enjoy by itself. It’s chewy and sweet flavor is especially satisfying for when you’re having a sugar craving after dinner, like I do.
Olympic Trail Mix from A Better Life with Burgers // I’ve noticed this week that in the afternoons I’m on the hunt for a crunchy, flavorful snack. Rather than cave and buy my weakness (Cheez-Its!), I opted to make a healthy, high-protein snack that I can eat over the next several days (though I’m sure it’ll go much faster with Terry around!). I also realized that a lot of folks are hosting or attending Olympics viewing parties, and this crunchy bowl of deliciousness would be perfect in place of chips.
Courgette Fritters from Family Wellness by Ola Zasinska // My daughter loves these courgette fritters, which are a hit at my house. Plus she also loves to help make them. These easy courgette fritters are crispy on the outside with soft, fragrant courgette inside. Enjoy them warm as a lunch or side dish, or make ahead for picnics and party food.
Graham Cracker Sandwiches from A Daily Dose of Fit // I like these as a make-ahead snack, too. I’ll often make them at night, store them in the ‘fridge, then stick them in my gym bag before heading out in the morning. Carbs, protein, and sweet-tooth satisfaction. All layered up in one healthy snack.
Not So Messy Endive Snacks from A Girl & Her Mutt // Endive is a fun little vegetable. It’s a part of the chicory family, which includes members like radicchio, escarole and curly endive. It looks like a little head of romaine lettuce with crisp leave. It has an interesting taste that is a mixture of bitterness (in the good way) and a little nutty.
East Two-Minute Lemony Hummus from Healthy Chicks // This Mediterranean style lemony hummus checks all the boxes: it’s easy, made with just six ingredients (that you likely already have on hand), and no oven required! Win, win, win.
Baked Mac’n’Cheese Balls from Braise the Roof // When I was first attempting to make these, I actually tried to roll them into balls and it failed miserably- maybe if I used a TON more cheese they’d stick together better, but I found that just cutting off squares and carefully dunking them in the egg/bread crumb kept them together much better and made the process a lot quicker. So do that.
