1. What’s your name, blog name, and how did you create your blog title?
My name is Veronica, my blog name is Elegantly Vegan. I created it as I wanted to showcase another side of vegan food. As at the time I started this initiative, it was a lot of focus on lentils and other foods not looking and sounding so appetizing. So that’s where it started and came from 🙂 First it was a cookbook for iPhone and Ipad and now it’s a blog and lifestyle website.
2. What can a new visitor expect to find from your blog?
Recipes, foodie news (new exiting ingredients), travel guides for foodies and heaps of inspiration for a healthy lifestyle through choosing plantbased alternatives. I’m developing the content further to become a bit more personal, as I’ve previously hidden behind my camera, but this will change 🙂

3. What is one lesson you’ve learned about blogging since you first started your website?
To plan content, to have a content schedule and post more regular. As well as to become more personal, and put myself out there more, as people can relate more to that and I think taking my blog to the next level includes me to share more of my own life and daring to be more personal. I’m evolving the website and blog right now.
4. Do you ever experience days when you don’t want to make healthy choices? How do you motivate yourself when you really need it?
Days when I’m stressed at work and had a bad night of sleep, those are the worst! Then I just crave loads of coffee (which I try to cut down on – man that is soo hard!) and I also crave more food and feel too tired to go on my regular run och hit the gym. What I do then is that I try to drink raw cacao, comfort myself with green tea instead of 10 cups of coffee (I allow myself two cups/day nowdays, instead of the crazy amount that I had before, especially while living in London). Then I go for a lunchtime walk outside, and after work I compromize, I do a shorter run or a shorter session at the gym. So I at least I exercise , afterwards I feel much better and I take an early night, to get back in to my own rhythm again.
5. What is your favorite way to get moving, burn calories and energy, and get your exercise-on?
I love to go running in the forrest or the park close to my flat. It’s a lovely way to end my day, get any bad experiences from my day out of my system and also as extra motivation to run harder if I’m pissed off!
Otherwise if I’m all for short morning runns, pre breakfast as it works wonders for me. Both mentally and to speed up my metabolism for the day. It’s not for everyone, but it works for me. I can feel my body fuelling up for the rest of the day.
