Today’s featured kid-friendly recipe is Life and running in Iowa’s apple pancake truffles!

Here’s an excerpt from the post:

Breakfast was inspired by Caitlin’s (from Healthy Tipping PointPancake Truffles. I made the banana version the other day, and switched it up a bit this morning using apples.  The result was a delicious breakfast that breaks away from the normal oatmeal routine.
